Lemon Garlic Scallops And Asparagus- All in one pan



I don't know about ya'll but I love lemons. Lemons are so good on so many things, especially seafood. Asparagus is probably one of my boyfriends favorite cooked veggies, as well as mine.


You can use frozen or fresh seafood, your preference. if you use frozen seafood make sure to thaw it out before use.


I did 12 Scallops and 12 Shrimp you can do less if you prefer, the cook time will just be cut in half. I also used the whole bunch of asparagus.

Preheat the oven to 400* degrees


Ingredients:

1Ib of scallops

1Ib of shrimp

1 lemon

1 bunch of asparagus

Olive oil

Butter

Salt

Pepper

Chile flakes

Dried basil


Thaw seafood if frozen

put asparagus on the pan, I split it up in two halves so the juices would go to the center of the pan, and that will let the asparagus get a little crispy not the edges.

Put a touch of olive oil on both halves with a pinch of salt and pepper on each.

Cut the lemon into quarters and put two one each bunch along with two squares of butter on each as well.

Put in the oven for 10 mins

Melt a little less the half a stick butter in the microwave about 20 seconds or so, put all over the seafood with a pinch of salt and pepper, Chile flakes, and basil. Toss until the seafood is coated evenly.

After the asparagus has had 10 minutes in the oven, put the seafood in the center of the pan along with several pieces of lemon and put it back in the oven for 10 more minutes.


If you wanted to make this a full sit down dinner make some spaghetti, cut the asparagus into to chunks, and toss the shrimp in a little bit more lemon juice and olive oil. I love doing this and pairing it with a sweet white wine.
