Easy Peezy Greek Salad- A Southern Thing

Hi all! I get asked so much what kind a salads I eat. I figured I'd share this one first because its so easy to make. You kinda just dump, chop, and go. I got the recipe from Pinterest, and tweaked it to my taste. I usually make a big bowl of this salad because the longer it sits the better it is. It's got plenty of protein in it for it to be lunch, and fill you up. So lets get to the list of ingredients!


Large Pitted black Olives

Garbanzos (Chick Peas)

Bragg Organic Vinaigrette (I use this because its literally the best dressing I've ever had)

Feta Cheese Chunks

Carrot Sticks or Chopped Carrots

Uncured Dry salami (or your favorite brand)

Peperoncini Shredded

Cherry Tomatoes

Onion (optional) I don't normally put onion in mine.



The first thing I do is wash the Chick Peas I like the texture of them a lot better after its washed, I don't know why its just a thing a thing for me. I use the whole can of peas


Next I'll drain the olives but not all the way, because I like a little bit in the salad. I use the whole can of olives but if you aren't a huge fan of olives you don't have to put in the whole can.










Halve the tomatoes. (you can quarter them if you want) I use 2 cups of halved Cherry Tomatoes.

I like to chop the carrots into fine pieces just cause I don't like the carrots for taste necessarily I like them for the crunch they give to the salad. I used about 6 medium sized sticks. I think that comes up to a little less than a cup.

I use 1 cup of shredded Peperoncini. They are described as medium heat but if you aren't a spicy lover like me you can use less or just put some of the juice it sits in on the salad.

I like the Sticks of Salami I think they have a little bit more flavor. Honestly the Salami is your choice I think that the uncured tastes better with the salad dressing. If you use the stick just cut it into chunks of your size preference.

After you've chopped and dumped everything into a bowl put some nice Feta cheese chunks on top of everything. I used half a cup.


Now after all that Pour the salad dressing all over that shiz!

After I'm done mixing in the dressing I usually let it sit in the fridge for at least an hour covered. You can serve as is. I think this salad is super easy, and taste so good, it taste fresh and light but can still be very filling. If you want to go the extra step you could add pasta to it, and make it a pasta salad instead. I have done that, and it tastes just as good.

You can Meal prep with this salad. You can entertain with this salad. You can take this salad to a party or function, and people will love for it.
